Interesting. I think you should base the grass starter off an ibex (https://en.m.wikipedia.org/wiki/Alpine_ibex) like Gogoat and Sawsbuck. They are excellent climbers.

I've already made a rock type for an Ibex. It has gender differences; females become half ground type, and males become half fighting type

How about an aeolian wall lizard for the grass starter? They usually hide behind rocks or in small shrubs. (I think, it's been a while since I covered Italy in Geography tutoring)
