I always leave out Leafeon, Espeon, and Eevee when making a Eeveelution team.

Espeon hidden ability is good in doubles - Leafeon knows Swords Dance - I know I can't leave them out. They both are cute, Leafeon a bit more.

I don't believe in Eeveelution teams, to me it isn't logical. You can't hardly find wild Eevee's, or the evolutions in the wild and it would be too bothersome to bye then as eggs plus the stones and leveling two Eevee's up for Espeon and Umbreon.

I vote keep Espeon. She's adorable. I say leave out Jolteon, Eevee and Sylveon. Jolteon I don't like because of its design and abilities, Eevee because it's the weakest, and Sylveon because Fairies are weak to more than they are strong to (I'm pretty sure.)

I'm used to all the extra hard work into raising Eevee - already playing my 4th Eeveelution team. Breeding for me isn't the the problem know how to breed them with Nature,and Ability - main issue is just hatching females.

If you're hatching females, you're screwed. It takes days to hatch a full team of female Eevees. Good luck on making your team... Just keep in mind that my Eeveeloutions team didn't do so hot. Maybe you should reconsider doing it. But if you want to.... Go for it.
